Pumpkin Seed Granola

Granola has always been a must have in my pantry. It’s a perfect snack and I love eating it with yogurt. I’ve always bought my granola but after making this once, I’ll definetly be making my own much more often. It’s super simple, just as delicious and cuts down on a lot of sugar. You actually know what you’re eating now.

Let me break down what this happiness tasts like. It’s:
Crunchy
Pumpkin-y
Nutty
Cinnamon-y
Coconut-y
Healthy
Yummy
Satisfying
Customizable
Shareable
And this list can go on and on and on.
Make a batch of this and you’ve got breakfast and snacks sorted for week. Now grab a mixing bowl, toss everything in and stick it in the oven!
Ingredients
  • 2 cups Old Fashioned Oatmeal
  • 1/2 cup Chia Seeds (optional)
  • 1/2 Pumpkin Seeds
  • 1/2 cup Sunflower Seeds
  • 8 tbsp Coconut Oil
  • 8 tbsp Honey
  • 1 tsp Vanilla Extract
Directions
  1. Preheat the oven to 135 degrees Celcius
  2. Combine oatmeal, chia, pumpkin seeds and sunflowerseeds in a large power.
  3. Pour oil, sweetener and vanilla over dry ingredients.
  4. Mix until evenly distributed and all the dry ingredients are covered in the oil mixture.
  5. Spread granola evenly over a baking sheet and bake for 45 minutes. Toss the granola at least 2 times for even toasting.
  6. Let cool and place in air-tight containers.
Notes:
  • Honey can be replace with any other sweetener of your choice such as molasses, agave or maple syrup.
  • The granola can be stored in air-tight containers or placed in the freezer.
