Tomato, Basil and Onion Bruschetta

The perfect quick and easy appetizer to get your party started. We all know the well known tomato and basil pair. Now, add onions and toss it in olive oil and balsamic vinegar. Finally, pile it high up on a slice of toasted baguette. This classic Italian dish is elegant and impressive yet so simple to make.

Bruschetta is one of my favorite Italian dishes. It’s fresh, vibrant and full of color. You know the phrase, “the camera eats first”? Technically, the eyes eat first; food is eye candy. Therefore, the camera eats second and finally we eat third.
I love how simple this recipe is but make sure you keep an eye on the bread when toasting it. You don’t want it to burn! Though when toasting it, my advice is to place it on the highest rack just so it’ll take less time.  I literally made this with a maximum of 10 minutes. That’s how fast it is. A few minutes toasting, a few minutes cutting, top it on bread and wah lah! a beautiful appetizer awaits your guests. You’ve just got to “mix it all together and you know that it’s the best of both worlds”!
  • 2 cups diced Tomatoes
  • 1/2 medium Red Onion
  • 3 tbsp Olive Oil plus additional for brushing
  • 1 1/2 tbsp Balsamic vinegar
  • 3 tbsp fresh chopped Basil
  • 1 small Baguette
  • 1 clove Garlic, peeled and halved
  • Salt and Pepper
  1. Combine diced tomatoes, red onions, chopped basil, olive oil and balsamic vinegar in a bowl. Season with salt and pepper to taste. Set aside.
  2. Brush baguette with olive oil and toast in the oven until top is golden brown, about 2 minutes.
  3. Immediately rub toasted baguette with garlic clove.
  4. Top toasted baguette with tomato mixture and serve.
  • The tomato mixture can be made 2 hours before serving. Simply cover and rest in a room temperature, stirring occasionally.
  • Keep and eye on the baguette when toasting in the oven to ensure it doesn’t burn. An alternative it so place it in a toaster.
