Butterless Chocolate Chip Cookies with Coconut Oil

Give your average chocolate chip cookies a little twist with this easy butterless chocolate chip cookies! Use coconut oil instead for the loving soft and chewy cookie.

Cookies have to on that list of best desserts. The cookie monster knows so and you better be hiding these before he comes and devours them all! (If he doesn’t, I’m sure you are fully capable of it.) This recipe yields about 30 small to medium sized cookies. So theres plenty to go around!
These are simple, mess-free, delicious and a great on the go snack. And they are definitely the best to have when straight out of the oven. All nice and warm with ooey gooey chocolate chips paired with a glass of ice cold milk. Chocolate and milk? Match made in heaven.
You might have guessed already but these cookies have no butter! Instead we’re replacing it with some melted coconut oil. Usually solid at room temperature, all you need to do is spoon it into a microwaveable bowl and heat it for a few seconds to melt it down.
(There’s a bonus! The coconut oil gives it that extra bit of flavor!)
Coconut oil is a great alternative for people who tend to avoid butter but still enjoy all the yummy foods in the world. And I must say, the smell of coconut oil is amazing. This is probably really weird but I literally spent a minute or two just smelling the oil from the jar…  (No judging! We’ve all got those weird moments right? Please tell me I’m not the only one.)
Not to worry if you don’t like coconut! (I actually don’t like the taste of coconut. You know how people drink the juice and eat the coconut flesh? It just tastes really bad to me… But for some reason, I like the taste of coconut oil.) You can taste the tiniest bit of coconut in these chocolate chip cookies. It’s definitely not an overpowering flavor, especially with the sweetness of chocolate chips. The coconut oil adds a slight crispness to the outside of these cookies but leaves the inside soft and chewy – the essentials of what a perfect chocolate chip cookies should be!

  • 3/4 cup liquid Coconut Oil
  • 2 teaspoons Vanilla Extract
  • 2 Eggs
  • 2/4 cup Sugar
  • 3/4 cup packed Brown Sugar
  • 2 1/2 cups Flour
  • 3/4 teaspoon Salt
  • 1 teaspoon Baking soda
  • 1 heaping cup Chocolate Chips


  1. Preheat the oven to 190 degrees Celcius.
  2. In a large mixing bowl combine the liquid coconut oil, vanilla, eggs, sugar and brown sugar. Mix until well combined.
  3. Sieve in the flour, salt and baking soda. Stir until all the ingredients are incorperate and you are left with a smooth dough.
  4. Fold in the chocolate chips until evenly distributed.
  5. Line a baking sheet with parchments paper.
  6. Taking about a tablespoon and a half of cookie dough, place the dough scoops 1 inch apart on the baking sheet.
  7. Bake cookies for 9 – 12 minutes until lightly browned. Remove and cool on a wired rack.
  • Coconut oil is usually solid at room temperature so pop it in the microwave to melt it down. It makes it easier to mix into our cookie batter.
  • Work quickly when baking these cookies as the coconut oil will begin to set as its resting at room temperature. The dough will start to stiffen and become more crumbly to work with.
  • I’m not sure what size scoop I use but it’s about a tablespoon and a half. It’s not necessary to use one but I find it much easier, faster and a lot tidier than forming little balls with my hands.
  • Depending on the size scoop you use, you may need to adjust the baking time slightly. Simply just bake till the cookies are slightly golden as they’ll still be “baking” and firming up during the cooling time.
  • This recipe can be alternating very easily. Add or subtract the amount of chocolate chips, use white chocolate chips, add nuts. Do whatever your heart desires! One way I though of to change this recipe a bit is to use mint chocolate chips!
